Equipment

  • handheld mixer

Ingredients
  

  • 1 cup heavy whipping cream
  • 1 tbsp raw honey (optional)
  • 1 tsp pure vanilla extract (optional)

Instructions
 

  • (Optional) Chill mixing bowl in fridge or freezer for 10 minutes
  • Using an electric mixer or whisk utensil on a stand mixer, whisk the heavy cream on low speed for 1-2 minutes.
  • Gradually increase to medium speed as it begins to thicken
  • When soft peaks form, turn the mixer to low speed
  • Add in raw honey and vanilla (if using)
  • Continue mixing on low speed just until you have stiff peaks beginning to form
  • Do not overmix!!

Notes

Occasionally stop the mixer and scrape the bowl when neccessary.
Stiff peaks hold their shape and don't run, even when turned upside down.
