- 1 cup heavy whipping cream
- 1 tbsp raw honey (optional)
- 1 tsp pure vanilla extract (optional)
(Optional) Chill mixing bowl in fridge or freezer for 10 minutes
Using an electric mixer or whisk utensil on a stand mixer, whisk the heavy cream on low speed for 1-2 minutes.
Gradually increase to medium speed as it begins to thicken
When soft peaks form, turn the mixer to low speed
Add in raw honey and vanilla (if using)
Continue mixing on low speed just until you have stiff peaks beginning to form
Do not overmix!!
Occasionally stop the mixer and scrape the bowl when neccessary.
Stiff peaks hold their shape and don't run, even when turned upside down.
